ROLL CAKE WITHOUT ADDED SUGAR

Coffee roll cake is a classic at home served at grandma's, but next time try baking it yourself! You often have the ingredients you need at home, it's easy to bake and can be flavored with most things. This version is a healthier roll cake without added sugar that can be enjoyed every day.
INGREDIENTS
Roll cake:
- 4 eggs
- 1 2/3 dl almond flour
- ½ dl Use like sugar
- 1 tbsp fiberhusk
- 1 tsp baking powder
- 2 crumbs vanilla powder
Chocolate filling:
- 125 g mascarpone
- 75 g dark chocolate
- 35 g butter
- 2 tbsp Use like sugar
- Decorate with fresh berries
METHOD:
Bottom:
Set the oven to 175 degrees. Whisk the eggs and Use like sugar for a few minutes until it becomes fluffy with an electric whisk. Then mix the dry ingredients in a separate bowl and then stir this into the egg whisk. Place a piece of baking paper in the bottom of a baking tray and pour out the batter so that it is about 20X30 cm. Remember that the batter should not be spread too thinly, then the cake will easily break, but make it a little thicker. Bake the base in the middle of the oven for about 12-15 minutes. When the roll cake base is removed from the oven, transfer it from the sheet of baking paper to another sheet of baking paper. Leave to stand for a couple of minutes before carefully removing the first sheet.
Chocolate filling:
Melt the butter and chocolate carefully so it doesn't burn, a tip is to do this in a bowl in the microwave. When the butter and chocolate are melted, stir in the mascarpone and Use like sugar. Mix to a smooth consistency. Then gently spread the filling onto the cake base. If the filling is hard and difficult to spread, you can warm it slightly to soften it.
Next, it's time to roll up the cake. Roll the cake from the short side all the way to the other short side, making sure it is as thick as possible. You don't need to roll it tightly. Once rolled up, wrap the cake in cling film to keep it together and leave it to cool in the fridge for at least 30 minutes.
The cake is now ready to serve! Cut it into slices, place on a cake platter, top with berries, lemon balm and chopped chocolate.
