Recipe: Carrot cake

CARROT CAKE WITHOUT ADDED SUGAR

Carrot cake is a beloved classic that always brightens up the afternoon coffee. This version is also a real guilt-free pleasure as it is completely without sugar, which makes it a healthy carrot cake to enjoy both as a coffee break and snack. A perfect cake with a good glaze of cream cheese, Use like sugar and a fresh touch of lemon juice. Easy to make and irresistibly delicious.

INGREDIENTS

The cake:

  • 3 eggs
  • 2.5 dl Use like sugar
  • 1/2 dl oil
  • 100 g melted butter
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp salt
  • 150 g apples
  • 150 g carrots
  • 1 tsp bicarbonate of soda
  • 3 1/4 dl flour (gluten-free for those who wish)

Glaze:

  • 100 g butter
  • 1/2 lemon
  • 150 g Philadelphia cheese
  • 3 tbsp Use like sugar

METHOD:

Carrot cake:

Start by whisking the eggs and Use like sugar together in a bowl until the batter becomes porous and fluffy. Then add the melted butter and oil. Next, whisk all the dry ingredients in another bowl: gluten-free flour, salt, cardamom, cinnamon and bicarbonate of soda. Mix the dry ingredients with the sugar and egg batter. When you have the batter ready, add the carrots and apples. Pour the batter into a baking dish and bake in the oven for about 35 minutes at 175°C.

Glaze :

Mix 100 g melted butter, juice of 1/2 lemon, 150 g Philadelphia cheese, 3 tbsp Use like sugar. Put the icing in the fridge until the cake is ready.

When the carrot cake is ready, spread the icing on top and leave it to set for a while. A tip is that you can leave the cake in the fridge overnight so that it's ready to be served cold and tasty for the fika the next day.
