
Recipe: Blueberry pie
BLUEBERRY PIE WITHOUT ADDED SUGAR WITH VANILLA ICE CREAM

Blueberry pie is a real fall favorite that is perfect as something sweet after dinner. This recipe is completely sugar-free but tastes just as sweet and delicious. Tip: serve the blueberry pie with a scoop of vanilla ice cream, an incredible combination.
INGREDIENTS
Pie:
- 2 dl Use like sugar
- 250 g butter (room temperature)
- 3 dl rice flour
- 3 dl almond flour
- 2 dl oatmeal
- 1 tsp salt
- 1 tsp baking powder
Blueberry filling:
- 500 g frozen or fresh blueberries
- 2 tsp lime zest
- 2 tbsp cornstarch
- 0.5 dl Use like sugar

METHOD:
Set the oven to 175 degrees.
Mix Use like sugar, rice flour, almond flour, oatmeal, salt and baking powder with room temperature butter in a bowl. It should be like a softer dough in consistency. Press out 2/3 of the dough into a pie dish. Then mix the blueberry filling, which consists of blueberries, lime zest, cornstarch and Use Like Sugar in a bowl together.
Pour the filling into the pie dish and then crumble the remaining pie dough over the filling. Bake the pie in the oven for about 30-40 minutes, then take it out and let it cool for about 5 minutes.
Serve the pie with a scoop of Vanilla Bean. Yum!
